4 Med. Green apples, sliced thinly
3 Eggs
1 Cup vegetable oil
2 Cups granulated sugar
1 Tsp. Cinnamon
1 Tsp. Vanilla
¾ Cup chopped nuts (Pecan or Walnut)
¼ Tsp nutmeg
2 Cups Self-rising flour
Directions:
Preheat oven to 325º. In a large bowl combine first 8 ingredients and mix well. Gradually add flour and mix until a thick lumpy batter is formed. In a well-greased and floured bundt pan, spoon the batter evenly. Bake in 325º oven for 1 hour. Remove and cool. Turn out onto plate and slice. Serve warm with scoop of Vanilla Ice-cream.
